There is a time and a place for a pasta fix! All the ingredients used are easily available and probably already in your kitchen cupboard. Simple to make in around 10 minutes which makes it perfect for lunchtime on a busy day.

Ingredients

  • 200g pasta (dry or fresh)

  • 2 tablespoons olive oil

  • 3 garlic cloves peeled and chopped

  • 1 small red chilli deseeded and finely chopped

  • 75g salted anchovies

  • 500g passata

  • 200g pitted black olives

  • 3 tablespoons chopped capers

  • 50g Parmesan grated

Directions

  • Put a large saucepan of water on to boil. Once boiling put the pasta in. Lower to a simmer and cook according to the instructions on the packet.
  • Heat the olive oil and fry the garlic, chilli and anchovies on a low heat for 2 to 3 minutes. Stir in the pasta, olives and capers. Simmer gently until the pasta is cooked to taste in it’s pan of boiling water.
  • Strain the pasta and stir into the sauce. Serve immediately with some grated Parmesan and fresh basil.
