Chicken Tagine

Easy to make in 20mins or so and a great boost to protein intake. To reduce the calories, try not using oil.

Instructions
  1. Mix Cinnamon. ginger. turmeric. pepper, cumin. salt, lemon juice and 1 tsp oil. Add the chicken and coat with the mixture.
  2. Heat 1tbsp oil in a pan and sauté the onion for about 5mins. Add the chicken and remaining marinade and saute for another 5mins. Stir in the flour for 30seconds.
  3. Add the garlic, cinnamon stick, apricots, 50g almonds, chick peas and stock. Boil then simmer until the chicken is cooked and sauce thickened. Add herbs
  4. Toast 50g almonds in a dry pan for 5mins. Remove, chop and sprinkle over the tanginess before serving
